Almost throughout its runtime, it walks through Mark's memories of his wife and the last few years he spent with her before she ed away.
Parallely, the Apple TV+ sci-fi show's episode also unfolds the mystery surrounding the testing floor by confirming that Lumon is using it to conduct secret experiments on Gemma. The episode hints that Mark's work in the MDR directly ties into the experiments by confirming that each testing room on the floor is named after a file Mark's innie has worked on. Although the episode introduces a wide range of rooms, it only gives a glimpse of what happens inside three of them, hinting at what Lumon might be trying to achieve through the tests on Gemma.
3 The Dentist's Room
Wellington
In Severance season 2's episode 7, Gemma recalls visiting six rooms: "The Billings room, the Lucknow room, St. Pierre, Cairns, Zurich, and The Wellington room." Out of the six rooms, Wellington is the first one she visits. As soon as she enters Wellington, she transitions into a new innie, who grows increasingly fearful after she realizes where she is. She seems visibly nervous after seeing Doctor Mauer, suggesting that she knows what is about to happen to her in the room.

Severance season 2, episode 7 introduces a disturbing new Lumon character, Doctor Mauer, who has dark ties to the central mystery of the show.
Although the episode does not dive into the details of what happens to her in the room, it seems evident that Mauer performs some kind of dental surgery on her. He seems to intentionally subject her to dental pain to check whether she carries the trauma from the room once she leaves and transitions into her outie. Each room on the testing floor seems to turn Gemma into a new innie. She is also expected to dress differently for each room, which allows her to identify where she will be going for the day.
Doctor Mauer mentions that the Cold Harbor room will be the final room Gemma will enter, marking the end of the test.
After Gemma leaves Wellington, she has no memories of what happened to her. However, she complains of jaw pain, suggesting that even though the memory of what happened has been completely blocked by the severance procedure, the body's physical reaction to the dental procedure persists.
2 The Turbulent Flight Room
Unknown Name
Severance season 2's episode 7 does not reveal the name of this room, but it turns out to be one of the strangest innie experiences featured in the series so far. After she transitions into a new innie, Gemma finds herself in what seems like a flight simulation in this room. She is seated in a window seat as a enger on the aircraft and experiences the stress of immense turbulence. Mauer also shows up on the flight disguised as an attendant and sets her up with a meal. He even asks her if she would like some coffee or tea before being thrown up to the ceiling by the turbulence.

This room not only seems to hint that Lumon possesses simulation technology but also highlights how the company walks Gemma's innie through humanity's most common fears. After Wellington exposes her to the fear and trauma from dental pain, the second room triggers the fear of flying. It must be noted that since the innies only exist inside the testing floor rooms, they are caught in loops of eternal hell where they are constantly exposed to the same fears.
1 The Endless Christmas Room
Unknown Name
Before walking into the third room, Gemma dons a wedding ring and red nightgown. Inside the room, she seemingly writes multiple "thank you" letters for Christmas presents with her left hand before her hand starts hurting. The room again seems to subject her to some kind of psychological torture, designed to test whether the trauma experienced by her innie traverses to Gemma's outie consciousness. Gemma re nothing when she steps out of this room but seems to notice how her hand hurts.
By recreating an experience from Gemma's life for her innie, Mauer seemingly tries to check if there are any leaks of her outie's memories in her innie consciousness in the room.
The experience in this seems to specifically riff on some of Gemma's old memories. In an early scene, Gemma tells Mark she hates writing thank-you letters. Lumon seems to know about her personal dislikes and seems to craft the room or many other rooms accordingly. Before Gemma leaves the endless Christmas room in Severance season 2's episode 7, Mauer even tells her he loves her and prompts her to say the same. This parallels Gemma's last few moments with Mark when she tells him that she loves him before leaving for a party, but Mark absentmindedly ignores her.

Interestingly, showrunner, Dan Erickson, revealed in an interview (via Mashable) that the Christmas room on the testing floor in Severance season 2's episode 7 is based on his own childhood annoyance surrounding writing a lot of thank-you letters for Christmas.
