Per TV Line, Hudgins says that Remy's final scene, where he toasts each of his team , was done as a way of allowing the audience to say goodbye to each of the characters, through the character's voice. He also talks about how knowing there was no renewal allowed him and the writers to give the show, and its characters, the send off they deserved. Check out Hudgins' comments below:

The Show Wrapped Up Its Story In A Fitting Way
Though the cancelation would have been unwanted, FBI: Most Wanted season 6, episode 22, managed to satisfyingly end the procedural. Remy retiring and opening a restaurant with Abby allowed the pair to finally have a calmer and more focused relationship. It also allows him to follow a ion after years of being in active service. The way he addresses the team at the end fit perfectly with the family dynamic of the show. It gave each of FBI: Most Wanted characters a little time in the spotlight, and was directed as much at fans as at the characters themselves.

The finale took the time to tie up arcs for other characters as well. Dylan and Abby got the ending their story deserved, Hana and Ethan moved in together after he got out of rehab, Cora and Ray had a baby, and Nina reconciled with her father in Texas. This all felt like it wrapped up the show well, and Remy addressing the team at the end was a culmination of years of interpersonal relationships — a fitting end to a strong and close-knit team.

The Show Could Have Gone One More Season, But This Honestly Felt Like A Fitting End
It's interesting that Hudgins reveals that the season would have ended on a cliffhanger had FBI: Most Wanted season 7 gotten a renewal. This would almost certainly have changed the fates of many of the characters, and, though the show probably deserved one more season, in honesty, it felt like the right time to end it. With plenty of time to plan and plot how to conclude the series, the writing team was able to craft the most fitting finale possible, and another season might have made FBI: Most Wanted less iconic.
