Monica is one character whose specific birthday never gets mentioned. However, going off when she says it was a month ago in "The One With The Ick Factor", and with the Friends wiki page listing it as April 22nd, Monica's official zodiac sign is either a Taurus or Aries. Monica does exhibit the stubbornness of a Taurus, but the sign doesn't appear to be a great fit for her.
Monica's two most closely associated signs are her official sign, Aries, and Virgo. In of Virgo, she is an absolute perfectionist, and adores cleaning and control, getting anxious at the smallest detail out of place. The Aries side of Monica points to her competitiveness, her need to be number one, to be the best, and her acceptance of all challenges to come her way. Both sides of her personality fit perfectly with two signs. That could indicate that while her star sign is Aries, her moon sign is Virgo.
MIKE HANNIGAN (Aries)

The eventual husband of Phoebe and one of Friends' best side characters, Mike Hannigan, was a big part of the show at the end of the series but never had his birthday revealed. He's one of the few characters to successfully become part of the established friend group, but the show didn't make a point to devoting an episode to his birthday as it did other characters. His zodiac sign, therefore, isn't an official one, but one often agreed upon by fans and astrology enthusiasts.
Mike is a relatively easy person to place as he is clearly an Aries. Mike shows this in his actions as he quit law to fulfill his dream of being a pianist, he flew to Barbados to propose to Phoebe so as not to lose her, he stood up to his parents and their friends, and played that dreadful ping-pong game with Monica. Mike shows ion, creativity, competitiveness, and fire, which are all traits of an Aries.
RACHEL GREEN (Taurus)

Rachel is someone whose birthday gets muddled in the continuity. She mentions she is an Aquarius to a police officer and celebrates her 30th birthday under that sign. However, more firmly stated and believed is that her birthday falls on May 5th, which aligns with other parties thrown for her throughout the series, making Rachel a Taurus. Rachel is the character who has the most birthday parties thrown for her in Friends, and since the more consistent season for those parties is the spring, Taurus is the most likely fit.
Rachel is far more suited to her more accepted literal sign of Taurus, loving luxury, extravagance, and having an adoration for materialism, than she is the rebellious Aquarius. Taurus is also usually seen as the most dependable sign, and while her friends might not always see her that way, Rachel tries her best and is incredibly loyal to them.
CHANDLER BING (Gemini)

Chandler's birthday is not revealed within the show's canon. It only gets one vague mention in relation to Rachel's birthday in May when she gets thrown a surprise party. This makes Chandler either an Aries or a Taurus if that comment is considered canon.
Chandler does not fit with either of his potential signs, compared to the other zodiac signs. He is not anything like an impulsive Aries, and even though he loves comfort and luxury, he is not a steadfast Taurus. Ultimately, Chandler fits best into Gemini. Hilarious and sarcastic, but deep down craves love and approval, and uses his humor to deflect from his deep-rooted feelings and insecurities. Those are all traits associated with a Gemini.

ROSS GELLER (Libra)

Ross's age and birthday are one big mess in the Friends continuity. Ross has a birthday in December according to one episode, whereas it falls on October 18th in another. There is another occasion where Ross's birthday falls in late March due to a comment that his birthday was seven months before October 20th. This means Ross has one of four possible star signs; Libra, Sagittarius/Capricorn, or Pisces. The more common consensus is that Ross's birthday is October 18th due to other pieces of the Friends timeline.
Ross is the hardest of the six friends to place as there are traits from many signs within his character, just as is true for real-life personalities. While many would think he fits best with Capricorn because of his trying to hide his feelings for Rachel for years and seeming to be moody (seen as a negative Capricorn trait), he actually fits Libra very well. Libras tend to amass allies instead of doing things alone, and they also can be very charming, flirting through many relationships while they search for the perfect partner. That definitely describes Ross.
GUNTHER (Scorpio)

Gunther is the recurring character who appears the most in the show. He is the only character to appear almost as often as the main cast. Despite his numerous appearances, Gunther does not even get his surname mentioned throughout the show, though he is a fixture at Central Perk, where the central characters spend so much of their time. Therefore, it is no surprise Gunther's birthday, and therefore his official Friends zodiac sign is unknown.
It is also fairly hard to place Gunther into a specific zodiac sign. He is comfortable like a Taurus; he is mysterious and lives in a dream world like a Pisces. Above all else, though, Gunther seems to be more of a Scorpio. He is immensely secretive/mysterious and is massively resentful towards Ross, and even other of the gang that are not Rachel, as well as being hugely jealous.
RICHARD BURKE (Sagittarius)

Listed on the Friends wiki with a birthday of December, 10th 1948, Monica's boyfriend Richard Burke is both twenty-one years older than Monica, as well as a Sagittarius, even if it is never explicitly stated in the show. Their age difference might be the larger point of contention for the audience, but Richard's nature as a Sagittarius actually suits both Monica's ionate side as a potential Aries and balances the need for order her potential Virgo side has.
Sagittarius is both the adventurer and the scholar of the zodiac. Those born under the sign tend to love learning and striving for more. They keep looking for satisfaction, whether that's in travel, work, or relationships. Richard, who finds love with Monica after already having a lifetime of love with his wife and having grown children of his own, fits the bill. He can match her ion, but he can also help loosen up her more stringent personality traits.
JANICE LITMAN-GORALNIK (Sagittarius)

The Friends' wiki page also lists a birthday for Chandler's on-again-off-again girlfriend, Janice. It notes her birthday as being December 12th, which lines up with the air date of season three, episode eight - in November - when Chandler says her birthday is coming up. This, of course, makes Janice a Sagittarius just like Richard. It's interesting that the most significant relationships for both Chandler and Monica other than one another would be with a Sagittarius in the Friends zodiac.
Janice fits pretty well with her star sign with curiosity and energy while also being loud and adventurous. She might not be as scholarly as Richard, but they represent different aspects of the same sign. She is on the hunt for more as well, which is why it's not surprising to see her searching for a lasting love. She doesn't find it with Chandler or Ross during their relationships, but she does end up with a family as she returns to the show to give birth.

Joey has a mysterious birthday in that it is never explicitly mentioned throughout the show's ten seasons. It is commonly agreed to be early January, though, primarily due to when "The One Where Chandler Can't Which Sister" is set since it is Joey's birthday party, making Joey a Capricorn, though the exact date corresponding to his Friends zodiac sign is unknown.
Joey might not seem to fit Capricorn. He is not organized, self-controlling, or very responsible. He has the warmth and charisma of a Leo, which might be part of the reason he wants to be in the spotlight as an actor. Joey does, however, have the persistence and the loyalty of a Capricorn. Arguably, she is the core member who best fits her canonical Friends zodiac sign.
Phoebe does have an official birthday as per her reveal to Frank Jr. that it falls on February 16th. In a later season, though, she celebrates her birthday early on October 31st, putting her birthday in November. This means Phoebe is officially an Aquarius but celebrates another birthday as a Scorpio. Her Scorpio birthday might be a reference to something in her past though since Phoebe led an eclectic life and didn't even realize she was a year older than all of her friends.
Phoebe fits in perfectly as an Aquarius. She is both original and independent and has a lot of eccentric qualities. Phoebe is very emotional, driven primarily by her emotions in fact, and remains the perfect fit for Aquarius throughout the show. Arguably, she is the core member who best fits her canonical Friends zodiac sign.
