The absolute worst ACNH task has got to be getting all 4 of the rarest Fish (Giant Trevally, Blue Marlin, Tuna, Mahi Mahi) collectables, and I wouldn't wish completion of this on my worst enemy. Here's a rundown of how you have to get those to understand the pain:
These 4 Fish in particular will only spawn when you sprinkle Fish Bait at the Pier/Dock with absolutely no other time/way, and there are only two ways you get Fish Bait: 1) Dig up Manila Clams on the beach and then craft each Clam meticulously into Fish Bait, since the game only lets you craft one item at a time and you cannot just dig up 40 Clams and then with a single button press craft 40 Fish Baits at a workbench, it has to be one Fish Bait at a time, and then scatter Fish Baits over the Dock/Pier just to get a *chance*, chance being the operative word here, to catch one of these rare Fish, and you have to do this 3 times in total for each of these 4 Fish to make a Collectable for each one, or 2) Work out a deal with a friend/acquaintance you've met online to pay them in Bells to give you Fish Bait or the Fish they made/caught themselves, which took a long time for them to do. Sounds tedious and time-consuming, right? Congratulations, you're less sadistic than Nintendo.
Here's what needs to change for the next gen Animal Crossing game: Either let us buy Fish Bait at Nook's Cranny after crafting it a certain number of times or failing at that, at least allow us to craft multiple Fish Baits from multiple Manila Clams in one button mash.
