Actually, the ending is perfect because it shows that Wyatt's goal was peace, and he achieved that by going back and finding his one, true love. Like you said, he didn't "want" violence, so the fact that he had to use violence to achieve his final goal was just the ends justifying the means. His family was avenged, he found his love, and thus he finally was able to relax, THAT is what the ending showed.

Also, Obi-Wan didn't choose Soresu originally, he practiced Ataru, same as his master Qui-Gon Ginn. He switched after Qui-Gon was killed and adopted a more defensive style, but also incorporated aspects of Ataru to help with offense.
