To me the best adaptation by far was Werner Herzog's 1979 "Nosferatu The Vampyre" with the great Klaus Kinski as Count Dracula. Quite a bit more eerie and scary than this modern adaptation, plus it was truly an art film of the highest caliber!

I think it's odd that no one refers to Herzog's film in comparison. To me Herzog did the absolute best Nosferatu film of all time.
