You are confusing linear with guided. The first Zelda games were not truly open world, as you had to have certain items or abilities to access portions of the map. It just didn't tell you where to go. The new ones *are* open world AND non-linear. Just bc there is a suggested order, doesn't mean you have to follow it since you *can* actually go anywhere in botw and totk or even skip everything and go straight to the last boss.
