Biff did return to a changed timeline. That's why he disintegrated - in the timeline where he grabbed the book, he was still alive. In the timeline he created where he was stinking rich because of betting from the future sports almanac, he had eaten and drunk a lot more and as a result died of a heart attack a few years earlier, so he faded from existence, painfully.
