I've done this challenge a few times myself, and I really enjoyed it. Sometimes the game feels too easy with farming as you can normally get to the bottom of the mines in spring, have lots of blueberries in summer, cranberries in fall etc. I usually play with 25% economy to slow things down, but is still not enough with farming.
Fishing, ranching and lots of pigs eventually can get reasonable income with a slower acceleration, and can spend more time doing more fun things including mining.
The one minor change from your run that I did is the rule was that I couldn't sell any crops I grew. This still allows community center completion, and coffee for speed, but without making money too easily from farming, just for utility.
