Now that Mayday's attack on Jezebel's has failed, she believes that pivoting the attack to Serena Joy's wedding is the best step forward. The amount of Commanders who will be present means that it is an even more valuable target than Jezebel's ever was, and the Handmaids' involvement makes Mayday's chances of success even better.

On top of that, the notoriety of the wedding also means that it is a perfect target. Since the wedding is so high-profile, June and Lawrence believe that Serena Joy will have many of the Gileadean Guardians leave the border and come protect the wedding. This would go a long way in weakening the country, allowing Mayday to score a major blow in the lead up to the finale of The Handmaid's Tale.

This wedding attack is a huge gamble, as it will either destroy Gilead, or make it impenetrable for the rest of The Handmaid's Tale.
